From our vineyards in Santo Stefano, in the heart of the Conegliano Valdobbiadene heritage area, Simone Follador brut sparkling wine is born. Harvested with care by hand, in the second decade of September, when the grapes are at the highest quality level. The fine Perlage ensures the persistence of the flavor and a clean sensation when tasted. The vinification is carried out with a soft pressing of the grapes, while the second fermentation takes place with the Italian Martinotti method where refermentation is induced in an autoclave. To be appreciated at 6/7 degrees with starters and fish first courses, also an excellent as aperitif.
